Italian Chocolate Cheese Pie

  • 2 - 8" U-Bake Frozen Pie Shells
  • 1 1/2 lb. whole milk ricotta cheese
  • 1/2 lb. U-Bake Granulated Sugar
  • 1 lb. Milk Chocolate
  • 2 T U-Bake Vanilla Extract
  • 4 T U-Bake Anise Oil
  • 6 Eggs, beaten

In a large bowl, cream together cheese and sugar; blend welll. Add chocolate to blender or food processor and finely chop. Add chocolate cheese to mixture; mix well. Add extract and oil and eggs: blend until creamy and smooth. Pour into 2 pie shells. Bake at 375 degrees for one hour. Cool on rack for one hour, then refrigerate. Serve chilled.
