Date-Chocolate Chip Cake

  • 1 1/4 Cups Boiling Water
  • 1 Cup Cut-Up U-Bake Dates
  • 1 tsp U-Bake Baking Soda
  • 1 3/4 Cups U-Bake All Purpose Flour
  • 1/2 Cup U-Bake Granulated Sugar
  • 1/2 Cup Packed U-Bake Brown Sugar
  • 2/3 Cup Vegetable Oil
  • 1 tsp U-Bake Baking Soda
  • 1 tsp U-Bake Vanilla
  • 1/2 tsp U-Bake Salt
  • 2 Eggs
  • Chocolate Chip Topping (below)

Pour boiling water on dates in 2 1/2-quart bowl; stir in 1 tsp baking soda. Cool to lukewarm.

Heat oven to 350 degrees. Stir in remaining ingredients except Chocolate Chip Topping into date mixture. Pour into ungreased square pan, 9x9x2 inches. Sprinkle with Chocolate Chip Topping. Bake until wooden pick inserted in center comes out clean, 50-55 minutes.

*If using self-rising flour, omit second teaspoon of baking soda and the salt.

Chocolate Chip Topping

  • 1/2 Cup Semi-sweet Chocolate Chips
  • 1/4 Cup packed U-Bake Brown Sugar
  • 1/4 Cup U-Bake All Purpose Flour
  • 2T Margarine or Butter, softened

Mix all ingredients.
