Banana Oatmeal Cookies

My version: Banana Oatmeal Cookies .....not really cookies, more of a 'sconey' biscuit and really yummy!

  • 2 cups U-Bake Oats
  • 3/4 tsp. U-Bake baking soda
  • 1 tsp. U-Bake cinnamon
  • 4 medium overripe bananas
  • 1/4 cup U-Bake sunflower seeds
  • 1/4 cup U-Bake chopped dates.....usually, I skip the seeds and double the dates.

Preheat the oven to 350ºF.

Use a good blender to blend the oats, cinnamon, and baking soda into fine flour. Pour the oat flour into a mixing bowl.

Put the peeled, overripe bananas, dates, and seeds into the blender and blend until completely smooth. Add to the oat mixture and mix well.

Place spoonfuls of the cookie dough on the baking sheet.

Bake for 12-20 minutes or so depending on how size of 'spoonfuls' or how dry/moist you want them. Keep checking and experiment.

Cool cookies on a wire rack and store in an airtight container in the refrigerator or just eat. makes 12- 24 cookies.
