- 2 1/4 cups chicken broth
- *1 1/2 cups cous cous
- 2 cups peas - blanched and cooled
- 1 1/2 cups scallions
- 1 cup shredded carrots
- 1 cup chopped red peppers
- 3/4 cup pine nuts
- 3/4 cup raisins soaked in 1/3 CUP orange juice (drain & reserve juice)
*add cous cous to boiling chicken broth, let sit 5 minutes, cool & fluff.
Dressing:
- 1/3 cup orange juice
- 1 tsp. turmeric
- 1/2 cup olive oil
- 3 tsp. curry powder
- 1 tsp. Dijon mustard
- Salt & pepper to taste
Mix & toss with cous cous & vegetables.
