Cous Cous Salad

  • 2 1/4 cups chicken broth
  • *1 1/2 cups cous cous
  • 2 cups peas - blanched and cooled
  • 1 1/2 cups scallions
  • 1 cup shredded carrots
  • 1 cup chopped red peppers
  • 3/4 cup pine nuts
  • 3/4 cup raisins soaked in 1/3 CUP orange juice (drain & reserve juice)

*add cous cous to boiling chicken broth, let sit 5 minutes, cool & fluff.

Dressing:

  • 1/3 cup orange juice
  • 1 tsp. turmeric
  • 1/2 cup olive oil
  • 3 tsp. curry powder
  • 1 tsp. Dijon mustard
  • Salt & pepper to taste

Mix & toss with cous cous & vegetables.
