Cranberry Apple Butter Bars

Filling:

  • 12oz. bag frozen or fesh cranberries
  • 1 Cup U-Bake Granulated Sugar
  • 1 tsp Grated Orange Peel
  • 1/4 Cup Orange Juice
  • 1/2 Cup U-Bake Apple Butter
  • 2 T Butter or Margarine

Base and Topping:

  • 3/4 Cup Butter or Margarine, softened
  • 1 Cup packed U-Bake Brown Sugar
  • 1 1/2 Cups U-Bake All Purpose Flour
  • 1 tsp U-Bake Salt
  • 1/2 tsp U-Bake Baking Soda
  • 1 1/4 Cups U-Bake Quick Cooking Oats

Heat oven to 400 degrees. Spray a 9x13 inch pan with cooking spray. In a 4-quart saucepan, mix cranberries, granulated sugar, orange peel and orange juice. Heat to boiling over high heat, stirring constantly. Cook over high heat 6-8 minutes, stirring frequently, until cranberries pop and lose their round shape and mixture thickens. Stir in apple butter and 2T butter; remove from heat.

In a large bowl, beat 3/4 cup butter and the brown sugar with electric mixer on med. speed, scrapping bowl occasionaly, until fluffy. Stir in flour, salt, baking soda and oats. Press 3 cuts oat mixture in pan.

Spread cranberry filling over base. Crumble remaining 2 cup oat mixture over filling; press lightly.

Bake 25 to 30 min. or until golden brown. Cool completely - about an hour 30 min. For bars, cut into 8 rows by 4 rows.

One medium orange will provide enough grated peel and the 1/4 cup of juice.
