Deluxe Corn Muffins

Makes 1 dozen.

  • 1 Cup U-Bake All Purpose Flour
  • 1 Cup U-Bake Corn Meal
  • 1/4 Cup U-Bake Sugar
  • 2 - 1/2 tsp U-Bake Baking Powder
  • 3/4 tsp U-Bake Salt
  • 1/2 tsp U-Bake Baking Soda
  • 1 Egg
  • 1 Egg yolk
  • 1 - 1/4 Cups Buttermilk, using U-Bake dry Buttermilk
  • 1/3 Cup Canola Oil
  • 3/4 Cup Whole Kernel Corn

Honey Butter:

  • 1/2 Cup Butter, softened
  • 2-3 T U-Bake Honey

In a large bowl, combine the first six ingredients. In another bowl, whisk the egg, egg yolk, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in corn.

Fill greased muffin cups three-fourths of the way full. Bake in preheated 400 degree oven for 18-23 minutes or until a toothpick comes out clean. Cool for 5 min. before removing from pan to a wire rack. In a small bowl, beat butter and honey until blended. Serve with muffins.
