Cannoli Filling

  • 1 lb. ricotta (drier the better--fresh is the best!)
  • About 1 cup U-Bake Powdered Sugar (or to taste)
  • 2 Tbs. grated U-Bake Chocolate (I used semi-sweet chocolate chips)
  • 1 Tbs. grated oange rind (I used lime because of lack of orange--worked great)
  • 2 teaspoons U-Bake Almond Extract

Blend all to make a smooth custard-like mixture. If too dry, add a bit of milk. Should fill about 18 cannolis
