1/3 cup (scant) U-Bake Fruit Pectin
3/4 cup water
4 cups U-Bake Sugar
2 Cups Fresh Strawberries (mashed), at room temperature
Mix mashed strawberries and sugar in bowl, set aside for 15 minutes stirring occasionally.
Mix fruit pectin and water in kettle, bring to a boil, boil for 1 minute, stirring constantly.
Add water/pectin mixture to strawberries/sugar mixture. Mix thoroughly.
Scoop into jam jars or containers of your choice. Let sealed containers sit on your countertop overnight, then freeze.
I like to freeze bags with 2 cups of mashed strawberries for later use, rather than making a lot of jam at one time.
